Maple and Cranberry Oat Cookies

A few years ago I had a phase of healthy baking. These gooey sweet treats were most definitely not part of that phase.

The Ingredients

Pre-heat your oven to 180°C then grab the following:

  • 50g butter
  • 3 dessert spoons maple syrup (or golden syrup- this recipe only came about because I'd run out of golden)
  • 30g sugar (caster or granulated)
  • 1/4-1/2 lid vanilla essence
  • 4 dessert spoons milk
  • pinch of salt
  • 50g flour (I use plain but many people go with self-raising)
  • 80g oats
  • 80g dried cranberries

The Sweet Bit

Cream the butter, syrup and sugar in a mixing bowl- mix it with a fork until it's smooth.

I microwave the butter for 10-15 seconds to make this easier.

The Other Wet Ingredients

Throw in your vanilla and milk. Mix.

Pretty straightforward step.

The Dry Ingredients

(You may have noticed I'm adding these ingredients by eye. I've made the recipe quantities as realistic if I can but feel free to go by pictures instead of weights...)

Again, this is pretty straightforward. Throw in the flour, oats and cranberries and don't forget the salt.

Mix until it almost looks like a healthy breakfast.

Into the Oven

Line a baking tray with baking paper.

If you're a terrible person and haven't already, wash your hands now.

Make the mixture into 6 balls then smush down into cookies. This will get messy.

Bake for 12-15 minutes or until golden.

Serve up and tuck in.
