Matcha Cookie With .stl's to Print Your Cookie Press System.
I made a print files for easy cookie press system and I thought I added here a tutorial how to use them with my recipe.
Resiple is very versatile, but this is not fast, I make this easy and chill it. But the easiness is more important than the fastness! You need at least few hours to chill, but you can keep it in the fridge for a day or even two. Bake when you have time.
Supplies
I am so sorry, I didn't happen to take pics when I was mixing the dough, because in the time I didn't think I'll post it here, I was just going to put it as addition to my Printables post. But here's what you need!
150g baking margarine. Butter is not better here, do NOT replace with butter. If you do, it will behave differently and you will need different amount of stuff.
5dl flour, I use just regular flour.
1dl sugar. That doesn't sound much, but I really don't like it any sweeter. If you like supersweet this is something you can add more! Or try different kind of sugars.
1egg, but you can leave it out. I like it better with, but sometimes I'm out of eggs and it's just fine.
splash of milk. It doesn't need much and it doesn't need to be milk, you can use any liquid.
1teaspoon of baking powder
generously vanillasugar if you like that, if you don't, just leave out!
I TRY to remember to add some salt, but I usually forget, it is nice addition, but not in any way critical.
You can add any spices you like, here I added hefty spoonfull of matcha powder. It does not need to be dry powder, sometimes I make these with black sesame paste and I just LOOOOOVE those, so I guess you can add what you like. Peanutbutter? Haven't tried it, but if sesame paste works, why wouldn't peanut butter!

If you don't have access to printer or you don't want to print stuff, do not worry! Before I made these yesterday I usually made these cookies with pressing balls of dough with glass bottom that has some nice pattern! Old glasses or something like whiskey tumblers have nice star-shaped pattern in the bottom.
Make the Dough!
I am a horrible person and make this dough sooooo wrong! And I'm not even ashamed!
Put margarine on the dough bowl and toss it into the microwave oven and meld it completely!
Add to the melted margarine sugars and mix with spoon, egg and milk and mix with spoon, if you have pastes of nutbutters or so, this is where you mix it in. mix baking powder to flour and if you have dry, powder additions, mix them into the flour. Now take hand mixer and mix the dry stuff into the wet stuff. When it's nice and mixed, put the dough into a plastic back, some box or just keep it in the bowl and toss it to fridge. You will need at least few hours but it don't mind if you leave it over 24 hours. So you can mix it early and bake it when you have time. I guess that you could even freeze it in this point but I have never tried it.
Making the Cookies With My Press!
When you have the dough chilled and cookie press printed, it's time to make cookies!
Roll dough to a log about 4cm cross, you don't need to take all the dough at once, it's easier to handle in smaller batches. Cut it about fingerbreadth slices. Dab one part a time into the flour, put inside of the ring and press it flat with the piston. That you have also dabbed into the flour. More you flour everything less it will stick and ruin your cookies.
Lift the ring off first, then you can peel the cookie off of the piston. Now flour the ornated stamping thingie veryvery well and knock it against the table to take the extra flour out of the holes. Press the picture and gently peel the cookie off of the mold.

Baking the Cookies!
I could had done few cookies more with my dough but I kind of messed placing these on the baking sheet. So! This dough does not need too much room when baking, so you can put them quite tight. Bake these in 200deg celsius for 10 minutes. I try not to get too much color for these because it's ruining the beautiful light green the matcha makes. Let them cool and eat!
As you saw in the earlier step when I show the ones I had made pressing them with a glass, I had put two of them together and put jam in the between. BTW, this is exactly the same dough with the same dosage I use as a pie bottom for my baked cheesecake. Or many other bakings. Not just cookies!
