Mexican Cornbread
Directions:
(2) boxes of Jiffy Corn Bread Mix (8.5 oz)
(1) pound of ground beef
(2) cans of cream of corn
(1) box of Velveeta Mexican style Cheese (the small box - 16 oz)
(1) pack of taco season Mild
(a) Mix Jiffy Cornbread Mix per instruction on box
(b) Season meat to taste try not to use a lot of salt because once meat is cook you must add the 1 pack of taco seasoning once you drain grease (follow directions on pack) then add the cans of cream of corn
(c) Dice of Velvetta cheese into cubes
I prefer to use a deep class pan 13x9 dish - coat with butter - Pour Jiffy mix halfway up in dish. Scoop ground beef in the center - spread out a little staying off the edges, add cheese randomly, more or less depending on how much you like cheese. Cover with the remaining Jiffy Mix and cook per the instructions on the box. (usually 400 for 15-20 minutes) please watch, everyone over cooks differently.
