Mini Bacon Herb and Cream Cheese / Muffins

Do you appreciate homemade muffins but don't have the extra time to make them from scratch? I have good news for you, this recipe will give you results that will make people think you have slaved in the kitchen all day to make them. The muffins were amazing considering the amount of time and effort that was put into making them. Blending different types of herbs will compliment almost any meal.

Ingredients

Here is a list of the ingredients, the recipe is posted in step 3:
  • Sour cream
  • Cooked, finely crumbled bacon
  • Melted butter
  • Finely chopped assorted fresh herbs
  • Green onions, chopped
  • Pepper
  • Self-rising flour
  • Cream cheese, softened (the whipped variety works really well)
  • Garnishes: assorted fresh herbs, cooked and crumbled bacon

  • Muffin tin, or cookie sheet and cupcake liners
  • Bowls
  • Spoons
  • Liquid measuring cup
  • Dry measuring cup
  • Oven

Recipe

Recipe ingredients and measurements:
  • 1 1/2 cups sour cream
  • 1/2 cup cooked, finely crumbled bacon
  • 1/2 cup melted butter
  • 1/4 cup finely chopped assorted fresh herbs
  • 2 green onions, chopped
  • 1/2 teaspoon pepper
  • 2 cups self-rising flour
  • 6 ounces cream cheese, softened (the whipped variety works really well)
  • Garnishes: assorted fresh herbs, cooked and crumbled bacon
I used fresh Parsley, Thyme, and Oregano

Prep Work

  • Measure all the ingredients.
  • Cook the bacon until crispy.
  • Crumble the bacon.
  • Finely chop the herbs.

Mix Herbs

Combine ingredients:
  • Chopped herbs
  • Pepper
  • Sour cream
  • Butter
  • Bacon
  • Mix well.

Add Herbs to Flour Mixture

Add the herb mixture to the flour and mix well.
It will be a thick mixture.

Fill Cups

  • Turn oven on to 375 degrees.
  • Fill the mini cups or muffin tins to the top with the batter mixture.
  • I used a mini ice cream scoop and it worked great!

Bake

Bake:
  • Bake the muffins for 20 minutes.
  • Remove from the oven and let them cool.
Please note: I baked my muffins just a couple of minutes too long because I did not set the timer. You really need to watch these because they are so small.

Topping

Top with cream cheese:
  • Top the muffin with cream cheese.
  • Garnish with a bit of bacon or herb.

I am entering this in the chemical reaction contest and need to explain the chemical reaction that is involved when baking these.
The self-rising flour which consists of salt and baking powder uses the leavening agent from baking soda; the soda reacts to something acidic (Butter or dairy product )and forms carbon dioxide gas.

I am pleased with the results of this recipe that I will be making them weekly. This recipe will save me hours of trying to think of something to bring to a party or dinner. It will most assuredly be a regular request. I am thrilled to share it here on Instructables. Go ahead put this on your list of things to bake and make it your family favorite! I hope to post a couple of favorite recipes in a few days.
