These mini cheese balls make adorable and easy appetizers for any get together! And you can make them ahead and customize them to your tastes like any other cheese ball.

I especially like these mini cheese balls because they're a simple way to feed a crowd. :D

Ingredients

The main base:
  • 8 oz cream cheese, softened
  • 1/2 - 1 cup shredded cheese - cheddar, parmesan, etc - anything that's not too soft
I always use 1/2 cup, but it you're feeling particularly cheesy, go for more. This basic recipe makes 12 tiny balls.

Seasonings I used:
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp pepper
  • 1/4 tsp salt
You can really switch these out for all kinds of things - use Italian seasoning, curry powder, or chili powder and cumin for different twists. As long as your seasonings go with the shredded cheese you choose you're good to go!

Ideas for toppings:
  • chopped chives
  • crumbled bacon
  • chopped walnuts or pecans
  • sesame seeds
And make sure to get some fancy crackers for serving - something nice and sturdy!

Mixing!

Add together your cheeses and seasonings and mix it all together with a spatula. I find it's easiest to mix it by folding and mashing it into the bottom and sides of the bowl.

Rolling!

Take enough of the cheese mixture between your hands to form a small ball, about 1 1/2 inches across. You should be able to get twelve balls of equal size out of this amount of cheese.

Coat Them in Your Toppings.

Put whatever you want to roll the balls in on a small plate, and roll them about, pressing gently with your hands to make sure the toppings stick.

I never try to cover them completely because it time consuming and never works the way you think it will. :P

Chill and Serve!

Chill the balls in the fridge for at least a couple hours - but you can store them for a couple days too. :D

Serve with fancy crackers and enjoy!
