Mini Cupcakes
This Sunday we were looking after my 2.5 year old nephew Max. He’s such a wee character, we love seeing him! We made little mini cupcakes and he helped me to make and decorate them!
These are so easy to do and take next to no time at all, the hardest part was convincing Max to wait until the end to lick the bowl!!
Ingredients
100g Caster Sugar
100g Margarine (stork)
100g Self raising flour
1tsp bicarbonate of soda
2 Free range eggs
1tsp Vanilla extract
Method
First of all, Max creamed together the butter and the sugar. Then he ate some.. This was tasty he says!
Then we added the flour and the bicarbonate of soda to the mixture and max stirred with a little help from me.
Finally we added the eggs and the vanilla extract and combined all ingredients together.
We used little cupcake cases instead of my usual large ones, and spooned the mixture around 3/4 full in each case. We then popped them into our preheated (180’C/gas 4/160’Cfan) oven for around 15 minutes!
Icing Ingredients
140g Margarine
280g Icing Sugar
A splash of milk if butter icing not soft enough.
Decorating
We used my Wilton 2D tip to ice our mini cupcakes, this is my favourite tip and I use it for most cupcakes!
Then we added hundreds and thousands and mini butterflies!
