Mini Rustic Wedding Cake!

I made a rustic mini wedding cake and I think it came out looking so cute. This is a great way to practice your cake skills /piping skills. If you like this then PLEASE favorite it and comment, it means a lot to me. Hope you like it!

Supplies

  • 3/4 cup butter (softened)
  • 1 1/2 cups flour
  • 1 cup sugar
  • 2 eggs
  • 1/4 tsp vanilla extract
  • 1/2 cup milk
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • vanilla icing

Preheat your oven to 350 degrees Fahrenheit. In a large bowl, combine the butter, sugar, and vanilla extract, and beat until very well combined. Then add the eggs and beat until combined.

In a small bowl, combine the salt, flour, and baking soda. Add about half of the dry ingredients to the wet and beat until combined. Then add about half of the milk and beat. Lastly, add the rest of the dry ingredients to the wet and beat for a few seconds, then add the rest of the milk and make sure it is all combined. You must make sure that you don't over beat it!

Grease a pan of your choice and pour the batter evenly into it. Bake the cake for 25-30 min. or until a toothpick comes out clean. Once baked, let them cool completely before removing from the pan.

Now, cut the cake into 3 different sized circles. One small, one medium, and one large. If you don't feel comfortable free handing it, you can use circle cutters instead. Once you have all 3 of your mini cakes, take the large one and place it on the cake stand. Next, we're going to do a crumb coat. A crumb coat is something you do to ensure that you don't have any crumbs in your final coat of frosting. To do a crumb coat, just thinly ice your cake, it doesn't have to be fully covered, just enough so that it traps in all the crumbs. Put your cake in the fridge for 15-20 min to firm up. Repeat this step with the other two cakes.

Once all the cakes have been crumb coated and chilled in the fridge it is time to start assembling and decorating. Put the largest cake on top of the final cake stand, then put a tiny dollop of icing in the middle on top of the cake. Put the medium sized cake on top of the large one, and put a tiny dollop of icing in the middle on top of the cake. Finally, put the smallest cake on top. If you feel like your cake is unstable, then put a toothpick going down the center of the cake.

Add the final layer of frosting to the cake and decorate if you would like. I used some tiny flowers and leaves from my garden. (Just make sure that you don't eat them if you're not sure they're edible) :)
