Mini Vegetable Pasties

These vegetable pasties are one of my kids favourite recipes. They love to help make these bite sized snacks. My fussy eaters can even choose their own fillings and we mark the tops with different patterns so that they can be easily identified after cooking.

Collect and Prepare Ingredients

1 tablespoon corn

1 tablespoon frozen peas

1/4 diced carrot

1/4 diced potato

1/4 diced onion

16 sheets puff pastry squares

2 tablespoons milk

(Select vegetables according to taste or season, or for a non-vegetarian option add minced chicken, beef, lamb or pork)

Combine all filling ingredients in a bowl.

Spoon 2 tablespoons of mixed vegetables on to each pastry sheet.

Brush edges of pastry with milk.

Pinch opposite corners of pastry square together, as shown above.

Pinch edges to close pasty.

Create steam holes using a fork.

Brush pasty with milk. (this will create a golden brown colour when cooked)

Bake

Bake at 220 degrees celsius (440F) for 15 minutes or until golden brown all over.

Serve pasties with tomato sauce. Enjoy!
