Mint Flavored Ice Cubes

IMG_1094.JPG
Now that It's summer time I love to have a big glass of ice tea on weekend afternoons. The beauty of these ice cubes is that they don't dilute my drink as they melt. They instead add to the flavors of it. It makes for a great refreshing drink! They can also be added to other drinks like mojitos or gimlets or even just a glass of water to add a little flavoring. I flavored my ice with mint, but some other possible flavors are orange, lavender, and strawberry.

Ingredients and Tools

2 and 1/4 cup water
1/4 cup sugar
20 leaves fresh spearmint

2 ice cube trays (I made ice spheres, 10 spheres per tray)
you can find the trays I used here: http://www.amazon.com/gp/product/B00832F71E/ref=oh_details_o06_s00_i00?ie=UTF8&psc=1

Boil the water, mint, and sugar for 10 minutes then let cool.
Fill your trays halfway with the mixture and float a mint leaf on top of each cube. That way you can get the mint leaf in the middle of the ice cube. Freeze, then fill the trays the rest of the way with the remaining liquid. Freeze again.

Serve!
