Mutton Kothu Parotta
Kothu Parotta is a very popular South Indian street food with numerous regional variations. Leftover parathas are shredded and cooked with spices, vegetables, eggs and meat (typically chicken or mutton). The vegetarian version is without eggs and meat.

Ingredients Needed
- Parotta (Frozen/Made)
- Mutton
- Egg
- Big Onion
- Tomato
- Green chili
- Curry leaves
- Turmeric powder
- Pepper powder
- Red chilli powder
- Coriander powder
- Salt
Spices
- Bay leaf
- Cinnamon Stick
- Cloves
- Pepper corns
- Cumin seeds
- Fennel seeds
Preparing Parotta
I have used frozen parotta.
Heat tawa
When it's hot , add frozen parotta . Cook for 2 mins on one side
Flip it and cook for 2 mins on other side
Once both sides are cooked remove it
Make parottas as much as you want, I have made 3 parottas
When parotta is cooled down, tear it into small pieces you can tare with hand or through food processor
Preparing Mutton Semi Gravy
Heat pressure cooker add a tablespoon of oil
When oil is hot add cinnamon stick, bay leaf and cloves
Add Cumin seeds when it splutters add 1 big onion chopped
When onion turns translucent add washed mutton
When mutton turns color add 1/2 chopped tomato , when tomato turns mushy add 1/4 teaspoon of turmeric powder, 1 teaspoon of red chilli powder and 1/2 teaspoon of coriander powder
Add required salt
Saute for 5 mins on medium flame
Add 2 cups of water and cook for 5 whistles on medium flame (cook until meat is tender)
Once whistle cools down open lid
Preparing Kothu Parotta
Heat pan , add 2 tablespoons of oil
Add cumin seeds when they splutter , add 2 big onion chopped onion .Sautee them until translucent..
Add 1/2 chopped tomato and 1 green chilli cut , cook till tomato turns mushy
Add 2 eggs , pepper, salt and curry leaves . Scramble eggs nicely
Now add mutton semi gravy , stir for a minute.
Add parotta pieces and mix them well. Add gravy again and mix it
Add pepper powder as per your spice levels.
Garnish with chopped coriander leaves
Note: Remember there is salt in Parotta and mutton , so add less salt
