No Bake Cereal Cheesecake

I can't take credit for this wonderful idea. I found it on a blog called Mom's Confession and just had to try it. Quick and easy, it is a great "last minute" dessert and was a big hit yesterday with our college football gathering. The thing I like best about it is you can us any of your favorite kid's cereals. I used Trix as she did in her post, but you can easily substitute Cap'n Crunch, Reese's Puffs, or whatever.

This recipe makes a fairly small, flat pie. If you would like a larger one, simply double the amount of cream cheese and powdered sugar.

Ingredients:

  • 4 cups Trix cereal (plus extra for decorating)
  • 1 cup powdered sugar
  • 1 8 oz block cream cheese (softened)
  • 6 tbsp butter (melted)

*NOTE: Whenever I am making a no-bake or refrigerator dessert, I find that glass pie plates yield better results. There is something about how they resist warming up when you take them out as well as getting cold more gently and slowly when you put them in. I also like using a small, personal blender for easier cleanup.

Crust Part 1

Grind the cereal in a small blender until coarsely crumbled. Place into a glass pie plate.

Pour the melted butter on top of the cereal crumbs and mix with a fork. Press the butter/cereal mixture down into the pie plate with your fingers or the bottom of a glass.

Filling and Finish

Place the softened cream cheese and powdered sugar into a mixer and mix on medium speed until incorporated. Take care that the powdered sugar doesn't fly out everywhere.

Pour the filling into the crust and spread evenly. Decorate with extra cereal just before serving (so it doesn't get stale or soggy).
