No-Bake Strawberry Cheesecake

Strawberry Cheesecake Recipe - No-Bake Without Oven & Eggless

Here is a tasty exciting strawberry cheesecake tutorial! This cheesecake has no eggs, and it doesn't need baking, so you also don't need an oven. It's a simple, straightforward recipe, that will guide you through making a delicious cheesecake at home.

Supplies

For this strawberry cheesecake, you'll need the following ingredients:

  • 350g (12.3oz) biscuits (I used petit beurre biscuits. Graham crackers and digestive also work as well)
  • 2/3 cup (150g) butter
  • 10g gelatin powder
  • 90 ml of cold water
  • 2 tbsp lemon juice
  • 300g strawberry (10.5oz)
  • ¼ cup sugar (50g)
  • 2 tbsp corn starch (16g)
  • 350g cream cheese (12.3oz)
  • 1g vanilla powder (or vanilla extract)
  • 2/3 cup heavy cream (160ml)

Grind the Biscuits

Using a food processor, grind the biscuits (350g) well enough until they turn into crumbs.

Add the Butter to the Crumbs

Melt 2/3 cup (150g) of butter using a microwave or double-boil method, and add them to the biscuit crumbs in the food processor. Grind for another 30-60 seconds for the butter to get mixed into the biscuit crumbs.

Making the Crust

Here I used a 6.6-inch pan (17cm). Nicely rub some butter on its floor. Then pour the biscuit-butter mix into the pan. Press it firmly with a spoon to have a smooth biscuit crust. Now put the pan in the refrigerator for 30 minutes for the crust to get firm.

It's Time for Gelatine and Lemon Juice

Pour 10 grams of gelatine powder into a bowl. Add 90ml of cold water and put the bowl in the microwave for the gelatine to get melted. Later on, we will use this melted gelatine.

In another bowl, we need 2 tbsp of lemon juice. I used raw small lemons and squeezed them. You can also use pre-made lemon juice bought from a grocery store.

Making of Strawberry Puree

Mix 300 grams of strawberry (10.5oz) in a bowl until they are smooth, add ¼ cup sugar (50g), 2 tbsp corn starch (16g), and the melted gelatine to the mix, put the bowl on medium heat and cook it on medium heat until it's thickened.

Finally, pour the whole mixture into a mesh strainer to make it smooth.

Get the Cream Ready

Add 350 grams of cream cheese (12.3oz) in a bowl and mix it well. Add 1 gram of vanilla powder and mix for another couple of seconds.

Add the strawberries, mix it well, and finally add 2/3 cup of heavy cream (160ml). Mix until you see soft peaks appearing. Be careful not to mix it more, as it will get yellow and firm (you don't want that!)

Pout the Cream Into the Pan

The biscuit crust is waiting for the cream to be added! Pout the cream into the pan, gently rub it to make a smooth surface. Refrigerate it for a night and you'll have a delicious cheesecake afterward!

Insert Strawberries and Enjoy Your Dessert

Cut the strawberries in half and decorate your dessert as you like.
