Nonna's Tiramisu

Learn how to make tiramisu like my Beneventani grandparents! You will need:

A pack of ladyfinger cookies

Mascarpone cheese

A brew of your favourite coffee (I recommend Lavazza)

5 eggs

3 teaspoons sugar

Get Out the Mixing Bowls

Take out two mixing bowls, at least one of which is large, and crack the eggs. Put the egg yolks in the large bowl and the whites in the small bowl. Be sure not to let any yolk get into the egg white bowl! Mix the sugar into the yolk bowl and put it under a mixer until uniform.

Beat the Egg White Until Fluffy

Clean the mixer thoroughly and put the egg white bowl underneath. Mix it until it's able to hold its shape rigidly.

Mix the Cheese In

Put all the mascarpone into the egg yolk bowl and mix again thoroughly.

Mix the Egg White In

Mix the fluffy egg white by hand into the yolk bowl until uniform.

Make the Cake!

The cake is made by alternating layers of ladyfinger cookies and batter. First put the coffee in a bowl, and for each cookie, dip it quickly into the coffee. Enough to soak it, but not enough to be soggy. Pack the cookies as tightly as possible into the first layer, then spread the batter overtop. Repeat until you reach the top of the tray.

Put in Fridge Overnight

Put toothpicks on top of the tiramisu and cover in cling wrap to keep it from drying out. Put it in the fridge overnight and enjoy it in the morning!
