Nutrition Complete Watermelon Meal

For people in the place where I grow up, when come home from field for working in the watermelon field in the summer heat, nothing beats the thirst and hunger like a bowl of watermelon with fried tortilla. When I combined how people in the place where I grow up eat watermelon with Paige Russell's watermelon salad, a nutrition complete watermelon meal is born.

Oil and carbohydrates from fried tortilla, protein and fat from cheese, fibers and aromas from herbs, occasional kick in the mouth from chili flakes, salty, sweet and acidic tastes from salt, watermelon, and lime, all together, make this meal nutrition complete, tasting amazing, and very satiating. If Gatorade is for guys who run miles in the summer, then this meal is for anyone who sweats in the summer.

Supplies

Ingredients:

8 heaping cups of balled seedless watermelon

3 cups of fried/grilled/baked flour tortilla coins cracker

1/4 cup chopped cilantro

1/4 cup chopped mint

1/3 cup fresh lime juice

4 oz queso fresco

1/4 tsp salt

1/2 tsp chili flakes

Olive oil for brushing tortillas

Vegetable oil for frying

Cooking Tools:

Melon baller

Cannoli forms
5-in-1 griddler

Fryer

Citrus juicer

Make Flour Tortilla Coins/crackers

Brush olive oil on tortillas, photo 1

Stack several of them up and use a cannoli tube to cut through a deck of them, photo 2 & 3

Use a chopstick to poke them out if they stuck inside the tube, photo 4

Both the coins and the holed tortilla can be used and adapted to this recipe, photo 5 and 6

Cook Tortilla Coins/crackers or Holed Whole Tortilla Sheet

Fry tortillas at 355 F for 2-3 minutes, be mindful especially whole wheat tortillas are easy to be overcooked, photo 1 & 2

Grill with both bottom and top plates on until slightly charred, photo 3 & 4

Or bake tortillas at 350F for 6-8 minutes, be mindful, avoid burning.

Ball Melon, Mix All Ingredients, and Serve

Use melon baller to take half sphere balls into a large mixing bowl, add tortilla coins and the remaining ingredients, mix and serve, photo 1 & 2

Or if use the holed whole tortilla sheet, use melon baller to take half sphere balls and place then on top, mix the remaining ingredients except lime juice, top the mix on top of melon balls, drizzle lime juice over and serve, photo 1, 3, and 4
