One Darn Good Scramble
Set Up and Ingredients
The time prep is about 15 minutes. Cook time is about 15 - 20 minutes depending on personal preference. You will need the following ingredients:
- 6 large eggs
- 1/8 cup of shredded cheese
- 1/2 onion (diced)
- 1/2 green pepper (cubed)
- 1 1/2 cups of meat (I used sausage)
- A teaspoon of the following
- Rosemary
- Oregano
- Salt (I used non sodium salt)
- And a dallop of Whip Cream....seriously, not kidding
- 1/2 table spoon of olive oil
- 1 large skillet/pan
- ACDC Background music, I don't cook without it.
Saute the Goods
Turn the heat on a large stove burner to medium. Put the olive oil in it and spread it over the entire pan. Add the meat, pepper, and onion to the pan. (I like to add tomato every once and a while sometimes but I had none). Sauté for 10 minutes or until cooked to your liking. I used precooked sausage, if you are using raw, you will need to cook it longer.
One thing I like to do is to add 2 tablespoons of water to the skillet after 8ish minutes to steam up the veggies a little. This helps to make the pepper and onion a little softer, I am not a big fan of crunching on my scrambles.
Adding the Eggs
Crack open the six eggs into a medium sized bowl, add about a smiley faces worth of whip cream (1/8 of a cup). Add the seasonings as well and mix it all up. This should all be done while the meat and veggies are being sautéed.
After the meat and veggies are done, add the egg to the skillet and mix her all up. Keep the heat on medium and keep watchful eye. You don't want to mix things around again until you start to see discoloration in the egg between the edges and in the middle. Once it starts to get all gel like then, you will want to mix it every 30-45 seconds to keep it from browning (depending on your preference). Just as an FYI, the whip cream makes the eggs a little more fluffy so your finished scramble will look a little moist, not runny but moist (like mist on a leaf).
Eat It
Serve on plates and sprinkle some cheese on top. Everyone likes something a little different on or in their eggs, so clearly you can do what ever you like to yours. The one take away you should have from this though is to add the whip cream, it makes the eggs fluffier and gives them a little better of a taste. When I make plain eggs and add the whip cream, I never add any seasoning because it taste great.
