One-Pan Honey Sriracha Lime Chicken Lettuce Wraps
Need a quick weeknight meal that's easy on the waistline? These one-pan honey sriracha lime chicken lettuce wraps are packed with flavor and make for a low-carb, quick-fix meal, sure to please the pickiest of eaters. You can make takeout-style chicken with just one pan, in under thirty minutes, and without the added calories, fat, sodium, and unpronounceable/unrecognizable (aka unhealthy) ingredients!
Ingredients
1 Tbsp olive oil
1 1/2 pounds boneless, skinless chicken breast cut into 1-inch cubes
1 cup water
1/4 cup honey
3 Tbsp low-sodium soy sauce
2 - 3 Tbsp sriracha
Zest and juice of one lime
2 Tbsp arrowroot starch or cornstarch mixed with 2 Tbsp cold water (to form a "slurry")
2 tsp black sesame seeds
1 head Boston or bibb lettuce
Optional add-ins:
Grated carrot
Sliced jalapeƱo pepper
Sliced bell pepper
Diced celery
Riced cauliflower
Sliced avocado
Cilantro
Heat olive oil in large skillet or saucepan over medium heat and cook 6 to 8 minutes, flipping pieces midway, until chicken is cooked through.
Add water, honey, soy sauce, sriracha, lime zest and juice, and arrowroot or cornstarch slurry. Stir until well combined.
Bring mixture to a boil over medium heat, stirring frequently. Allow sauce to thicken, about 3 to 5 minutes, and then remove from heat.
Stir in sesame seeds.
Serve chicken immediately on lettuce leaves with or without optional add-ins!
