One Pot Shrimp and Fried Rice in 20 Minutes

Easy and tasty shrimp and fried rice in 20 minutes. And you only need one pot!

This recipe makes 2 servings

Ingredients:

  • 1 and 1/2 cups cooked shrimp (thawed and detailed)
  • 1 cup instant rice
  • 1 cup water
  • 2 eggs
  • 3 tbs vegetable/canola oil
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • Soy sauce to taste

Equipment:

  • 2 quart pot
  • Spoon and/or spatula

Cook the Rice

Bring the water to a boil, then add rice and simmer on low for 5 minutes. Remove from heat, stir the rice and cover for 5 more minutes. Then move the rice into your serving bowl(s).

Cook the Eggs

Add the oil to the pot and return to medium heat. After the oil heats up, add the eggs and scramble.

Combine and Mix

When the eggs are cooked through, return the rice to the pot. Add the shrimp, pepper, garlic powder, and soy sauce. The soy sauce is to taste but 3 tbs seems about right. Mix thoroughly and cook for 2 minutes on medium heat.

Return to serving bowl(s) and enjoy! Add more soy sauce as needed.
