Oreo Fresh Mint Ice Cream (no Ice Cream Machine Needed)

My family and I love ice cream. Ever since the lockdown I've become an ice cream chef in my house. This is my favourite flavour inspired by Ben and Jerrys so I though I will write my very first Instructable about it.

We grow loads of fresh mint in the garden so I decided to use fresh mint for the flavour - I used a type called "Chocolate mint" (if you chew the fresh leaves it actually tastes like mint chocolate!).

It took 5 hours to make from start to finish; thanks to my little sister for helping to make it and my mum for taking pictures.

Supplies

Ingredients:

2 eggs

1 cup caster sugar

2 cups of double/heavy cream

1 cup of milk

1 cup chopped Oreos

5 stalks mint (any kind)

(optional) green food dye

Utensils:

Balloon whisk

Mixing bowl

Knife

Chopping board

Pestle and Mortar

Sieve

Mixing spoon

1litre/ Quarter gallon container (I used an empty yogurt container with a lid)

Making the Base

Crack the eggs into the bowl. Beat them until they're pale and fluffy. Whisk the sugar in, one teaspoon at a time until the mixture stiffens up a little. Pour in the cream, then the milk, then whisk some more. The base should be kind of stiff as you can see on the last picture.

Adding the Mint

Put the mint into the pestle and mortar. Grind it until it becomes a dark green clump, there will be a little bit of dark green liquid too. Strain it through a sieve by squeezing it with a spoon. Stir it. You can add 1 tea spoon of green food dye if you want to make it "look more minty", we didn't have any handy so I didn't put any in.

Next, transfer the mixture into the 1 liter/Quarter gallon container and put it into the freezer.

Freezing and Adding Oreos

Freeze the ice cream until it's stiff, thoroughly stirring every 30 mins. Make sure you scrape the sides and mix it with the rest of the ice cream in the centre of the tub or the ice cream will crystalise. While the ice cream is freezing, cut the Oreos into small chunks. When the ice cream starts thickening the spoon will leave a trail when you stir it (like on the second picture). Now you can add the Oreos and mix it thoroughly. Put it back to freezer until the ice cream is fully thickened - keep checking.

Serve and Enjoy!

Now the Oreo and mint ice cream is ready to eat! You can serve it in a cone, a bowl or you can eat it straight from the pot (like my eldest sister).
