Gather Your Ingredients

To begin, gather your ingredients. For this recipe, you will need:

1 pound chicken breast tenderloins

1 cup unsalted corn kernels

1 orange bell pepper

1 green bell pepper

4 tomatoes

1 small yellow onion

3 cloves of garlic, minced

2 tablespoons olive oil

2 teaspoons truffle salt

Prepare the Vegetables

Prepare the vegetables by carefully dicing them with a well-sharpened knife. Store in bowls until ready to use.

Prepare the Chicken Tenderloins

Prepare the chicken tenderloins by carefully cutting into uniform, 1 inch pieces. Be sure to use a different cutting board than the one used to cut vegetables to avoid cross-contamination.

Begin to Cook

Warm olive oil in a large saucepan over medium heat. Add onions and garlic. Cook for 4 minutes, stirring occasionally, until onions are transparent. Add the chicken and continue to cook and stir for an additional 8 minutes or until chicken is no longer pink.

Add all of the diced vegetables to the saucepan. Stir to combine thoroughly. Sprinkle with salt. Continue to cook for 15 minutes, stirring occasionally, until vegetables are fork tender.

Allow to Cool
