Peanut Butter Logs
This recipe will make two 12-inch logs
Ingredients
1 (12-ounce) package peanut butter flavored chips
1 (14-ounce) can EAGLE Brand Sweetened Condensed Milk (NOT evaporated milk)
1 cup Miniature Marshmallows (I used Jet-Puffed)
1 cup chopped peanuts (Although any nut will do. I used pecans.)
Cooking on the stove top-
In heavy saucepan, over low heat, melt chips with sweetened condensed milk. Add marshmallows; stir until melted. Remove from heat; cool 20 minutes.Divide in half; place each portion on a 20-inch piece of wax paper. Shape esch into 12-inch long. Roll in nuts. Wrap tightly; chill 2 hours or until firm. Remove paper; cut into 1/4 -inch slices.
Cooking in the Microwave-
In 2-quart glass measure, microwave chips, sweetened condensed milk and marshmallows on full power (high) for 4 minutes or until melted, stirring after 2 minutes. Let stand at room temperature 1 hour. Then divide in half; place each portion on a 20-inch piece of wax paper. Shape each into 12-inch long. Roll in nuts. Wrap tightly; chill 2 hours or until firm. Remove paper; cut into 1/4 -inch slices.
