Pi - Pumpkin Pie

Easy Pumpkin Pie:

1 can (30 oz.) LIBBY'S Easy Pumpkin Pie Mix
2/3 cup (5 fl.-oz. can) CARNATION Evaporated Milk
2 large eggs, beaten
1 unbaked 9-inch pie shell


Pie Crust Ingredients:
1 1/4  cup all-purpose flour
1/2 teaspoon salt
1 tablespoon sugar
1/4 cup, plus 3 teaspoons shortening
1 1/2 teaspoons vinegar
3 tablespoons water
1 egg

Mix pumpkin pie mix, evaporated milk and eggs in large bowl.

Pour contents of bowl into pie shell.

Bake in preheated oven at 350 degrees for 20 minutes.

While pie is baking, get pie dough, left over from cutting of around the pie, and add 2 teaspoons of water. Squish together until pretty moist.
Then smear green food coloring paste onto dough with toothpick, or your finger but it does make your hands a bit green :)

Once dough is green (will have stripes in it) lay in between saran wrap and roll out.

Cut a 4 inch x 4 inch square of paper. Cut an R in the square.
Lay on green dough and cut out the square and R.

Once pie has baked for 20 minutes, take out of oven and set your square in the middle of the pie.
Put back in oven and back for 50 to 60 minutes or until knife inserted near center comes out clean.
Cool on wire rack.

Serve immediately or refrigerate....so now you have a pie-r-square/d!!
