Pistachio Pudding Ice Cream

This is a custard-like ice cream made from instant pudding mix. The idea is nothing new, but I thought I would give you my version of a quick and tasty dessert.

Gather Materials:

One box instant pudding mix, pistachio flavor in this case
About 2 cups milk
About 1/2 cup heavy cream
About 1/4 cup sugar (or less)
About 1 cup shelled and crushed pistachio nuts

Feel free to expirament with the ammounts here. It will probably still taste good.

Gather Tools:

A medium-sized bowl
A wire whisk
An ice cream machine

Combine Ingredients

Whisk everything together in the bowl. Put this in the fridge to set up while you get out the ice cream machine.

Churn and Freeze

Dump the pudding into your ice cream machine. Make sure the core is frozen solid (overnight at least). Churn for about one hour, then scoop into plastic containers and freeze overnight to harden the ice cream.

If you don't have an ice cream machine, try putting the bowl of pudding in the freezer and whisking it very hard every few minutes.
