Potato and Spinach Parcels
Easy, quick, healthy and delicious Potato and Spinach parcels using puff pastry sheets. Hope you like it :)
Ingredients Required
- 1 puff pastry sheet
- 2 cups Spinach
- 2 medium Potatoes
- 1 small onion
- 2 cloves of garlic
- 1/2 cup cheese of your choice
- 1 tbsp olive oil
- Red pepper flakes to taste
- Salt to taste
- 1 Egg for egg wash ( Optional)
- Caraway seeds for garnish ( Optional)
Steps to Prepare Potato and Spinach Stuffing
- Wash and chop spinach finely and keep aside
- Boil potatoes, mash and keep aside
- Peel and grate garlic and keep aside
- Peel and chop onion finely and keep aside
- In a pan add oil, onion,garlic, chilli flakes and fry for 2 minutes
- Add spinach and cook till all water evaporates
- Add potatoes and salt and mix and cook for 4 minutes
- Let the stuffing cool, then add cheese and mix and keep aside
Creating Parcels
- Defrost puff pastry sheets as per instructions written in the package
- Cut one puff pastry sheet into 9 squares
- Place 2 tablespoon of stuffing in the center of each square
- Take one edge of the square and pinch it together with the opposite edge and do the same with the other 2 edges and pinch firmly
- Optional : Beat one egg and brush on top of each parcel to give a good glaze
- Optional : Sprinkle caraway seeds on top for garnish
- Preheat oven to 400F and bake for 20 minutes
- Yummy parcels are ready :)
