Potatoes With Chorizo Appetizer

Today I'll teach you how to make this traditional potluck dish. Mexican potlucks are called taquizas. Someone brings tortillas and salsa and everyone else brings a dish that can be eaten in a taco, so there are lots of fillings to choose from.

This is one of the most popular dishes for taquizas, give it a try and you'll see why. It's delicious, filling and budget friendly. Kids and adults will love it.

But as an appetizer are delicious too, I´ll teach you how to make tortilla cups to hold the potatoes and chorizo inside. If you need finger food, your guests will love it.

Gather Your Ingredients

5 Potatoes

1/2 onion

400 gr chorizo. It's a Mexican sausage made with pork and hot peppers.

3 large flour tortillas

Cook and Chop

Cook the potatoes. I always cook them in the slow cocker even if I'm making soup or something else at the same time. I wrap them with foil and it keeps the flavours separated.

Or you could use a pressure cooker or just boil them.

Peel them and cut them into cubes.

Slicke the onion.

Cook the Chorizo

Heat a pan on medium heat. Take off the thin outer layer that holds the chorizo. Put them in the pan. With a kitchen spatula pull apart the chorizo until you have small chunks.

Do not add oil, this meat has a lot of fat, it will fry in its own fat.

Stir the chorizos so that they fry evenly. It'll start smelling good and the meat's colour will change. We want them to be crispy but keep an eye on them, they burn easily.

Some times they're made with so much fat you can see a poodle at the bottom of the pan. When that happens to me I discard the extra fat. This time, as you can see in the pictures, they had just enough fat to fry them.

Add the Onion and Potatoes

When the chorizo starts to get crunchy, add the onions, when they soften add the potatoes. Mix well, the chorizo spices and fat will coat the potatoes and will give them a lot of flavour.

Make the Tortilla Cups

Cut a large flour tortilla (the ones you use for burritos) in four.

Put each quarter into a muffin pan

Bake for 10 minutes at 180 C or until you see they get crunchy, you will know when the colour changes.

Finally put the potatoes with chorizo inside the cups. You can add salsa, guacamole, or even sour cream.
