Make the quick puff pastry: Place an egg yolk in a measuring cup. add ¼ teaspoon of salt and 2 teaspoon of vinegar. Add approximately 100 ml of ice cold water and mix well. In total, we should have 125 ml of liquid. Place in the fridge.

Sift 250 grams of flour onto the table. Grate 200 grams of frozen butter or margarine into the flour, mixing the butter with flour frequently.

4.jpg

Make a well, and pour in the liquid and mix. Don’t knead the dough. Fold it onto itself: lift the sides and fold towards the middle, creating layers. Gather any pieces of dough left on the table, and add them to the dough.

Shape into a rectangular, wrap with plastic wrap or place in a plastic bag. Refrigerate for at least 2 hours. It is best to refrigerate the dough for 10-12 hours before using.

Make the filling: Combine 600 ml of water and 300 grams of sugar in a saucepan. Stir just until the sugar dissolves. Bring to boil.

You could use just apples, or use both apples and plums for extra flavor and color. Cut 3 apples in half. Remove the core. Slice into 2-3 mm thick pieces. Do the same with 3 plums.

Blanch the apples in the boiling syrup in batches. Remove as soon as it comes back to boil. Transfer to a plate, and cool. Repeat the same with plums.

Remove the puff pastry from the fridge, and roll 3 mm thick. Cut into 3-4 cm wide, 25 cm long strips.

Arrange the apple and plum slices in an alternating pattern, so that they alternate and overlap each other.
