Pumpkin Latte Mousse

This Pumpkin Spice Latte Mousse recipe is easy and delicious. Its light and fluffy texture won't make you feel "stuffed" after your favorite turkey dinner. This recipe for Pumpkin Mousse is a great seasonal dessert. This is a really creamy and soft mousse.

Ingredients

Ingredients

1 container yogurt

3 tablespoons strong brewed coffee

2 tablespoons pureed pumpkin

1/4 cup water

4 gm China grass/Agar Agar

1 cup eggs whites (from 6 large eggs)

3/4 cup sugar

Pinch of salt

Vanilla essence - 1/2 Tsp

Soak

Soak agar agar in water. Let it rest for 15 minutes.

Wet Ingredients

In a large bowl combine 1 cup of yogurt, vanilla essence, 3 tablespoons of strong brewed coffee and 2 tablespoons of pureed pumpkin. Mix until everything is uniform.

Egg White

Separate the egg white and yolk. Add sugar into the egg white.

Double Boiler

In the top of a double boiler (water in bottom boiling) mix egg whites, sugar and salt with a whisk. Continue to whisk occasionally until the sugar is dissolved and the mixture is very hot (not quite boiling).

Add china grass mix into the hot egg mix. Keep beating till the mix becomes airy.

Once the egg mixture has thickened add the yogurt mixture.

Pour into ramekins or whatever serving dish you prefer and chill in the refrigerator for 45 minutes at least - overnight for optimum firmness.

Serve with pumpkin puree and sugar topping.
