Pumpkin Oat Bread

Ingredients you will need for the topping:

3 tbsp of dark brown sugar

2 tbsp all-purpose flour

1/4 tsp of ground cinnamon

1 tbsp of chilled butter

1/2 c chopped walnuts

1/4 tsp ground nutmeg

Supplies

Mix everything but the butter and walnuts together. Cut the butter into the mixture using two knives or a pastry blender, then add the walnuts and mix everything together.

Ingredients you will need for the bread:

1 1/2 c all-purpose flour

1 c quick-cooking oats

1 egg

1 tsp vanilla extract

3/4 c packed dark brown sugar

2 tsp baking powder

1 tsp ground cinnamon

1/2 tsp salt

2 tbsp veg oil

1/3 c buttermilk

1 c canned pumpkin

1/4 tsp nutmeg

1/4 tsp baking soda

Combine the flour, oats, brown sugar, baking powder, cinnamon, salt, baking soda and nutmeg together. Beat the egg and then add the egg, pumpkin, buttermilk, oil and vanilla to the flour mixture and mix everything together.

Spray a 9x5 bread pan with non-stick cooking spray and add your mixture making sure to spread everything evenly. Add your bread topping to it, also making sure to spread it evenly over the mixture.

Spray the topping with non-stick cooking spray.

Bake in an oven preheated to 350° for 50 minutes, or until done (you can test it by sticking a fork in the middle and if it comes out 'clean' it's ready to take out.

This bread is one great way to celebrate fall. Pumpkin/cinnamon flavors are at the top of my list along with the changing of the leaves of why it's my absolute favorite season.
