Pumpkin Pie With Mascarpone

A pumpkin pie made with an original and very delicious recipe. The contrast with the mascarpone cheese makes it spectacular.

Preparation time: 40 minutes

For the cake:

600 grams of grated pumpkin

3 XL eggs or 4 M eggs

240 grams of wheat flour

160 grams of white sugar

160 grams of brown sugar

240 grams of sunflower oil

80 grams of peeled walnuts

2 teaspoons of cinnamon powder

2 and a half teaspoons of chemical yeast

For coverage:

500 grams of mascarpone cheese

180 grams of powdered sugar

Firstly, we preheat the oven to 180ºC with heat up and down.

While the oven heats up, we will carry out the following steps of this fantastic recipe.

We will also prepare the pumpkin. To do this, we will peel and remove the seeds. When we have the pumpkin clean we will grate it with the help of a grater.

The Cake Dough

We start by preparing the cake. To do this, we will put the 160 grams of white sugar, the 160 grams of brown sugar, the eggs and the 240 grams of sunflower oil in a bowl. We mix everything very well.

We add the 600 grams of grated pumpkin and integrate into the mixture.

We sift the 240 grams of wheat flour together with the 2 and a half teaspoons of baking powder and the 2 teaspoons of cinnamon powder. We integrate well.

Chop the walnuts and also add them to the mixture.

We will have the dough ready when there are no unintegrated flour remains and the nuts are well distributed.

Bake the Dough

Once the oven is preheated to 180ºC with heat up and down, we put a piece of baking paper on the base of the mold and cut off the excess. Grease the removable mold with a little butter and spread the dough into the mold. Bake for 35-40 minutes or until a toothpick inserted into the center of the cakes comes out clean.

We remove the cakes from the oven and let the mold cool.

When the cake is cold, we unmold it.

We waited a few hours to be able to manipulate it easily. With the cake cold it will be much easier to assemble the cake.

Mascarpone Topping

While the cake is baking, we can prepare the mascarpone coating.

For this we will need icing sugar, which we can buy ready-made or make ourselves. To make it ourselves, just grind the sugar with a blade mixer. When it is well ground, as if it were powder, we will have the icing sugar made.

Once we have the icing sugar, we mix it with the mascarpone cheese in a bowl and mix it with the whisk. Once mixed, we will cover the cake with the mascarpone cheese. We will shape with a spatula until the cheese is distributed evenly. If the cake is round, I use the wheeled plate of the microwave.

Decorate the Cake

The next and last step is decorating the cake.

In this case we will decorate it with walnut zest.

On a sheet of paper, we will draw a pumpkin, or whatever motif we like, and we will cut it out to make a template with it.

We will grate the nuts with a grater. We put the stencil on the cake and sprinkle the grated walnuts.

We remove the template and we will have this beautiful and delicious pumpkin cake with mascarpone finished.
