Pumpkin Spice Cookies
I made pumpkin spice cookies with cream cheese frosting. I made these because once fall begins, I love all pumpkin flavored things!
Supplies
Ingredients for cookies
· 2 ½ cups of all purpose flour
· 1 tsp of baking soda
· 1 tsp of baking powder
· ½ cup of brown sugar
· ½ cup of granulated sugar
· 1 tbsp of cinnamon powder
· ¼ tsp of ground nutmeg
· ¼ tsp of ground cloves
· 1 tsp of vanilla extract
· ½ cup unsalted butter (softened)
· 1 cup of pumpkin puree
· Salt
Ingredients for frosting
· 4 oz of cream cheese
· 2 tbsp of butter
· 1 tbsp of milk
· ½ tsp of vanilla extract
· ½ cup powdered sugar
Setting Up
Before beginning, preheat the oven to 350℉. This gives us time to mix everything while the oven gets ready for use!
Mix the butter, granulated sugar, and brown sugar in a large bowl for 3 minutes.
Add the pumpkin puree and vanilla. Mix until well combined.
Add in the flour, baking powder, baking soda, pinch of salt, cinnamon, nutmeg, and cloves. Mix in a folding manner until a dough is formed. If it is too hard to fold in, you case use your hands to make the process faster!
Pinch off about 2 tbsp of dough and roll it into a ball. Tip: Rinse your hands with water before rolling the dough into balls. This prevents the mixture from sticking to your hands.
Place dough onto baking sheet and bake the cookies for 14 minutes.
Allow the cookies to cool down.
Cream Cheese Frosting
Mix cream cheese and butter.
Add in the milk, vanilla extract, and powdered sugar. Mix until it reaches the desired consistency.
Frosting the Cookies
Once the cookies have cooled down, you can add the frosting on top. Enjoy!
