Pumpkin Waffle Ice Cream Sandwiches

This Halloween treat can't be beat!  Inspired by a trip to Florence, where I had gelato sandwiched between two sugar coated waffles, here's my Halloween take on an Italian delicacy.

Ingredients

Gather your ingredients.  The Key to these Pumpkin Waffles are to use Trader Joe's Pumpkin Pancake and Waffle Mix.  In order to prepare them you'll need water, a lightly beaten egg and melted butter.  Find your favorite ice cream (I used "fried ice cream" flavor) Also optional are giant sugar crystals.

Preheat Waffle Iron and Mix Batter

Make according to the directions on the box, Preheat your waffle iron and melt 2 Tbs butter, combine it with a lightly beaten egg and 3/4 cup water.  Once that's mixed, mix it with 1 cup of Waffle mix.

Make Waffles

Use a wooden spoon to smooth the batter all the way to the corners, or you will get weird looking waffles.  Add more if you need to to get good coverage.

Close the iron and let it sit until the waffle iron indicates the waffles are done.

Remove Waffles to Add Sugar and Cool

Open Waffle Iron
Split Waffles (if needed)
Put on a cooling rack so they don't get too soggy and optionally add sugar to the top of one waffle.

Continue to make more waffles til you're done.

Add Ice Cream and Enjoy!

Put your waffles on a plate and add as much or as little ice cream as you want.  Enjoy!

I like mine with lots of sugar and a little bit of ice cream.  My husband likes them with no sugar and TONS of ice cream.  Both ways are delicious.  How will you enjoy your Halloween treats?  We both agree that they are best for a halloween breakfast :-D
