Pumpkin and Ricotta Ravioli

This recipe is a healthy, delicious and easy way to make a delicious dinner. These yummy little ravioli have the most exceptional flavour and texture that you just can't miss them!! I hope you enjoy making and devouring this recipe!!

Supplies

​Ingredients:

For the Pasta:

  • 3 cups Plain Flour
  • 4 Eggs
  • 1/4 cup Water
  • 1 tbsp Olive Oil
  • 1 tsp Salt

For the Filling:

  • 200g Pumpkin, cubed
  • ​1 cup Ricotta Cheese
  • 1/4 cup Parmesan Cheese, grated
  • 1 Egg, beaten
  • Salt & Pepper
  • A Pinch Of Nutmeg
  • 1/2 cup Unsalted Butter

Making the Pasta Dough

To make the pasta dough start by placing all of the ingredients for the pasta into a stand mixer using the dough hook. After you have done that turn your stand mixer on and mix until it forms into a dough. When your dough is made, place it in plastic wrap and leave to rest for 1 hour.

Boiling Your Pumpkin

To Prepare your delicious pumpkin start off with placing your cubed pumpkin in a pot and covering with water. Place your pot on a cook-top, and cook your pumpkin until beautifully soft. After you have cooked your pumpkin, strain and cool to room temperature. Finally, mash your pumpkin until soft and creamy.

Making Your Filling

To make your filling, start by adding your ricotta into your pumpkin and mix thoroughly. After you have added the ricotta combine all of the other ingredients into your delicious ravioli filling.

Rolling Your Pasta

To roll your pasta, start off with running your pasta through the seventh setting and then folding it, do this twice. Keep doing this until you get down to the fourth setting.

Forming Your Ravioli

To form your ravioli, start by laying one sheet of pasta onto your ravioli. Then, you need to place small scoops of your filling onto each square. After that, place another sheet of pasta over to form your ravioli.

Cooking Your Pasta

To cook your pasta, start by bringing salted water to a rapid boil. When your water is at a boil, place your pasta in and cook until beautifully al dente.
