Rainbow Cake. Ish.

Rainbow contest. I immediately think: CAKE. Rainbow cake.So original right? Too late, it's here now.

Ingredients

Love is all you need.
Plus the list of ingredients bellow. ;)

125g of butter
225g of flour
150g of caster sugar
3 medium eggs
Pinch of salt
Tsp of vanilla extract
Tsp of baking powder

Making the Batter

Preheat oven at 160C/gas Mark 4. Grease an oven tray with a thin layer of butter.
Place all sponge ingredients in a bowl and mix with an electric mixer until fluffy. If the batter is too dry add one egg,and a splash of milk if still needed.
Divide the mixture in different containers and add different food colouring to each. Mix a bit at the time until you are happy with it. I added a little extra because I find the colours don't normally show as well after cooking.
Spread each batch on the tray.
Looking back I should at this point given all a little swirl so they would blend together slightly and the final effect would be more dramatic.
Bake in the middle shelf of the oven until golden brown on top. Cake test before removing ,leave it to cool only slightly.Run a sharp knive along the top to even it out. Turn it on a kitchen towel , and start rolling it to form a log.Choose the best ,even side to show on the outside.
You can spread different toppings before rolling it, i.e. chocolate spread, jam, lemon curd, cream cheese.

A Little Extra

If you have left over batter, experiment with different shades combination and make cupcakes. I made two in the cups I used to mix the cake colours. Next time I think I will make just the cup cakes.Nice and easy for children parties.

Since I didn't fill mine, I added a drop of lemon curd on the plate. ( A drop ,a few table spoons. Who knows ;) )

Cream Cheese Filling

250g of cream cheese
1 tsp Vanilla extract
Icing sugar

Briefly beat the vanilla and cream cheese until smooth. Add the icing sugar one tbsp at a time and gently fold it untill you have a spreadable consistency.
