Rainbow Cupcakes!
Colorful cupcakes can brighten a rainy day.
Supplies
-1 box of store bought cake mix or homemade cake batter (I used rainbow chip cake mix)
-Ingredients needed for cupcakes 1 box of cake mix, 1 cup of water or milk, 1/2 cup of vegetable oil, 3 eggs.
-Food coloring (colors of the rainbow)
-Oven
-Muffin tins and liners
-Icing
Gather Ingredients.
Make Cupcake Batter
Mix together 1 box of cake mix, 1 cup of water/milk(I did half a cup of both), 1/2 cup of oil, and 3 eggs.
Put Batter in Muffin Tins
Fill each section of a greased muffin pan 3/4 full. Makes about 17 cupcakes.
Heat Oven to 350'F or 175'C.
Bake for 12-17 Min.
While Cupcakes Are in Oven Make Icing.
You can make your own icing or you can use store bought, I prefer homemade.
To make icing, mix the butter and shortening in a large bowl till smooth. Then add 2 cups of powdered sugar and mix. Add vanilla and 1 tablespoon of water or milk. Add the rest of sugar. Then add the remaining water/milk and mix until smooth. Put in fridge until cupcakes are ready.
Vanilla Icing
1/2 cup of salted butter, room temperature
1/2 cup of shortening
4 cups of powdered sugar
1 1/2 tsp of vanilla
2-3 tbsp of water or milk
Let Cool Before You Ice Them.
Add Food Coloring to Icing for Colors of the Rainbow.
In little bowls, add a few drops of food coloring to small amounts of icing(in colors of the rainbow).
Ice Cupcakes
You're Done.
