Ravioli From a Scratch
It's one of my favorite Italian dishes. And it's great for dinner. It's ravioli! (Please, DO try this at home)
You’re going to need some basic ingredients: about a bowl of flour, 3 eggs, a pinch of salt and some olive oil (about a tablespoon or two). Easy, right? Put the flour on a clean surface like your kitchen counter and make a well in the center. Crack in the eggs and add the salt and oil.Then mix it using a fork. Start in the center(the eggs) and then slowly started taking flour from the sides and mixing it with eggs and oil to make your pasta dough.Once you can’t mix with a fork anymore, start using your hands.Knead it until it’s smooth and elastic-like.Wrap up the dough in plastic wrap and set aside for 20-30 minutes to rest. In this time make the fiiling. You need ricotta, parmesan (more ricotta than parmesan) , egg, some herbs (basil for example) pepper and salt. Put them into a bowl and mix (I added the egg at the end, so i could taste the filling). Now, the final part: put the dough on a quite big flat surface and using a rollinf pin flatten the dough so it's very thin. cut the dough into 2 equal parts. Put "drops"(about a tablespoon each) on one of them. Dhe size and distance depends on what size you want the ravioli to be. Put the other part of dough on top of the one with the filling. Cut it into squares (or any shape you like). Push down the edges. Put some water into a big pot. Boil it and drop in some of the ravioli. Whe they start to float on the surface take them out. You can put some parmesan on them. They are ready to be served!
