Red Velvet Bacon Cake

This is THE best red velvet cake I've ever made, and you NEED to make it! This cake is ridiculously moist, and will stick to the back of your fork!
Super moist, super creamy, and super bacony!

Ingredients:


2 cups flour
2 Tablespoons unsweetened cocoa powder
2 cups sugar
1 teaspoon of baking soda
1 teaspoon of baking powder
1 teaspoon of salt
2 eggs
1 1/4 cup vegetable /canola oil
1 cup buttermilk
2 teaspoon of vanilla extract
1 teaspoon of white distilled vinegar
1/2 cup of prepared plain hot coffee (this MAKES the cake!)
1-2 oz. red food coloring (depending on how deep you want the red to be)

Preheat oven to 325.

First, mix together flour, cocoa powder, baking powder, baking soda, and salt in a medium bowl.

Then combine the sugar and oil in a large bowl. Next mix in the buttermilk, eggs, vanilla and red food coloring. Lastly, stir in the coffee and white vinegar.

The coffee really makes the difference, and adds to the velvety flavor of the cake! If you skip the coffee, you'll seriously be missing out!

Batter time! Combine the wet and dry ingredients a bit at time until well combined.

This is where I would usually grease and flour my pans, but I was feeling lazy. I found that the "spray flower" worked fantastically. Spray two 9 inch round cake pans. Pour the batter evenly into the pans.

[While the cake cooks, we'll make the frosting in the next step!]

Bake on the middle rack for 35-45 minutes. preform the toothpick check to be sure its cooked through. (Stick toothpick in center of the cake; if it comes out clean, you're good)! let the pans cool, Then gently remove from pans with a knife or spatula. Let 'em cool off.

The Icing

This icing is the best! Buttery, creamy, and sweet! (but not too sweet).
It's also easy to remember... it just takes 2 of everything!

Ingredients:

2 (8 oz.) packs of cream cheese
2 sticks of unsalted butter (room temperature)
2 cups powdered sugar (16 oz. total)
2 tsp pure vanilla extract


Instructions:

Place the cream cheese in a food processor. (Or use mixing bowl and hand mixer). Beat the cream cheese until it's smooth. Add the butter in a bit at a time. Continue beating until smooth. Add the powdered sugar and vanilla, and blend until it's icing!

The Bacon

-Buy GOOD bacon

-Cut bacon

-Cook bacon on medium high heat until done

-Pat dry, and smash into bits

-BACON!


(Use a 10-12 oz pack to top your cake with)

I don't have any kind of serving tray, so i just covered our pizza stone with wax paper.

spread icing thick and evenly over the first layer. Stack the second layer and ice it from top to bottom. It helps if the icing is chilled. (much easier to manipulate)!

Add the bacon, and enjoy!
