Rice Crispy Squares
Back when my brother and I were kids my mum used to make her version of Rice Crispy Squares, this was way before Rice Crispy Squares even existed! I'm not saying that my mum invented them but she was doing them way before Kellogs.
I thought I would document it for the peoples of Instructables, I have seen these done on here before but mostly people just use toffee, mine has the extra ingredient of marshmallows.
Ingredients & Equipment
Ingredients
Rice Crispys, or a cheap store clone, doesn't matter as long as they are tasty
at least 200g of Toffee, now quality here does matter, get decent toffee not the cheap stuff, I use Werther's where I can, doesnt have to be the chewy kind.
200g of butter, I use Lurpak which is a blend of butter and vegetable oil but its mostly butter.
200g or more of decent Marshmallows, to be fair even cheap ones seem to work as long as they taste nice.
Equipment
A Large Saucepan
a couple of dishes or tins to put the mix in
a metal table spoon
a wooden spoon
bowl for the toffees
Preperation
I shouldn't have to say this, but wash your hands and use clean equipment.
I would advise some preparation here because when you start you cant stop otherwise you will burn the stuff or it will stick in your saucepan and thats going to be hell to clean.
If your toffee's are wrapped then unwrap them and put them in a bowl.
Open all your packets ready.
Using a tiny bit of butter on your finger tips lightly grease your tins or pans that you will be putting the mix in at the end.
Cooking the Mix
OK put your butter in the pan on a medium heat and melt it down to a liquid.
Now start adding toffee and marshmallows a few at a time, let them melt while keeping it stirred, always keep it moving so you don't burn it to the bottom of the pan.
Repeat until they are all gone, and you have a uniformed caramel color.
Addng the Crispys and Putting in Your Tins
For this part you have to work fast otherwise the mix will cool in the pan and be too hard to work with and it will be stuck in the pan.
Add some crispy's and stir them in, keep going until it starts to feel dry and you can't add any more.
Put the mix in to your tins/trays/bowls and level it out using the metal spoon, for some reason its easier to do with a metal spoon.
now pop them in the fridge.
Once they have cooled just cut them using a sharp knife and much away. nom nom nom
