Roasted Bone Marrows

Beef bone marrow is decadent and delicious. A Paleolithic favorite which has recently become a highlight at several Blue Ribbon restaurants in New York. Yet despite their fame beef bones are considered a byproduct by most in the US so they can be purchased for next to nothing. Full of nutrients such as calcium, sulfur, iron, potassium, phosphorous, and magnesium, bone marrow helps strengthen bones and connective tissues in the body. In addition bone marrow is full of polyunsaturated fatty acids, the 'good for you' fatty acids including Omega 3. The best bones come from grass fed beef found at your local farmers market or Whole foods store.

Roasting the Bones

Season the raw bones with salt and pepper. Place in preheated oven (450°) for 15 Min.

Serving

Bone marrow is rich. I suggest serving a small portion, no more than two bones on a small dish for each guest along with toast points. Make sure to provide a small spoon or knife for scooping out the marrow.
