Ronaldo's Ceviche

This is a recipe from my friend Ronaldo. His father was a deep sea fisherman in the Yucatan and used to make this fresh ceviche for the family when Ronaldo was a young boy living in Mexico. There are variations on what type of fish you can use, what add ins you prefer, which citrus juice you like the best, and how hot you want to make it. You can't go wrong, feel free to mix and match! It's fresh, tasteful, and healthy dish! Enjoy!

Marinate Seafood in Citrus Juice

Rinse off the seafood and place into a ceramic or glass dish. Use fresh squeezed lime, lemon, orange or a combination to completely cover the fish. Put in the refrigerator for 3-4 hours until fish is "cooked" through.

Chop Up Desired Add Ins

In a separate bowl, chop and seed ripe tomatoes, Maui onion, and cilantro. You can also add avocado or cucumber.

Add the Heat

Put gloves on and carefully fine dice half of a habanero.

Mix It All Together

Once the seafood is marinated and cooked through, drain the lime juice and add the tomato, cilantro, onion, pepper mix. Squeeze fresh lime juice over the mixture and add a dash of olive oil, 1 fresh garlic clove and salt and pepper to taste.

Chill and Serve

Once everything is mixed together chill for a half an hour and serve with chips and drink of choice
