Root Beer Float Cupcakes With Ice Cream Icing
Cupcake Ingredients:
1 1/2 cups flour
1 cup granulated sugar
1 teaspoon baking soda
1 teaspoon salt
1/2 cup oil
1 cup Root Beer (or 1 cup of water and 1 teaspoon of root beer extract) (this can be replaced with cream soda)
1 teaspoon vanilla extract
1 tablespoon vinegar
Icing Ingredients:
1/3 cup butter, softened
4 oz, cream cheese, softened
2 tsp vanilla extract
1/4 cup vanilla ice cream
3 tbsp milk
5-1/2 cups confectioners sugar (or to taste)
The ingredients don't have to be mixed in specific order but I'd suggest mixing liquid and dry ingredients separately before mixing liquid and dry ingredients together (cupcakes). Pre-heat oven to 350 degrees F and cook cupcakes for 20-25 minutes.
