Rustic Cottage Cheese and Sausage Gluten Free Pancakes

My mom has been making cottage cheese pancakes for me since I was a little kid, and the recipe is really easy! My boyfriend asked me to make pancakes with sausage so I decided to make a delicious addition to my usual recipe!

Ingredients

Here's what you need to make a batch of these delicious pancakes:

  • 1 cup of your favorite gluten free pancake mix
  • 2 cups cottage cheese
  • 4 eggs
  • a package of your favorite sausage

Cook the Sausage

Pre-cook all the sausage you are going to use. Once they are fully cooked, set them aside on some paper towels to drain some of the oil off them while you make the pancake batter.

Make the Batter

Combine pancake mix, cottage cheese, and eggs together in a big bowl and mix well. This pancake batter will look different than most pancake batters you are used to since the cottage cheese makes it pretty lumpy. Don't worry! Just make sure the pancake mix is fully combined and it will be fine!

Add Sausage

Once the sausage has cooled, chop it into small pieces and stir it into the batter.

Cook 'em Up!

Scope 1/4-1/3 cup of batter into an oiled frying pan over medium-high heat. Try to make the batter relatively even, even though it's chunky. Try to let one side cook completely before you try to flip them! These pancakes don't really exhibit the same signs of being done as traditional pancakes, so you will have to use a little trial and error. The cottage cheese will melt as they cook making for delicious, moist, gooey cakes! The outside should be golden brown with crispy edges while the inside will still be wet.
