STRAWBERRY PIZZA PIE
I am still unpacking from two years ago since moving to North Dakota and found my little recipe box that I treasured for years. I have all my recipes on a WORD document on my computer but "my little recipe box" that is SPECIAL because these are recipes that I have had for years and I was so excited when I opened it and forgot about so many recipes neighbors, relatives, and friends have given me throughout the years. When I pulled out this 3 x 5 card and my old Strawberry Pizza Pie recipe I forgot all about I knew I had to share this. It is so simple and absolutely delicious. One reason why is the glaze is made by crushed fresh strawberries; not that processed glaze one buys in the produce department.
Here are all the ingredients you will need:
2 qts strawberries
1 1/2 cups flour
2/3 cups butter
1/4 sugar
8 oz cream cheese
8 oz cool whip
1 cup powder sugar
1/2 cup sugar
4 1/2 teas. corn starch & water
1 Tablespoon butter
2 Teaspoons lemon juice
Crust
CRUST
1 1/2 cups flour
2/3 cup soft butter (not margarine)
1/4 cup sugar
Mix the above ingredients and press in an ungreased 10 inch or 12 inch pizza pan. Bake in a pre-heated 370 degree oven for 8 to 10 minutes or until just slightly brown. Watch it as it can get brown very quickly.
Glaze
Crush enough strawberries to make 1 cup. (I put in a food processor or blender) Put the 1 cup of crushed strawberries in a quart size kettle and add 1/2 cup sugar. Stir over medium heat.
Dissolve 4 1/2 teaspoons of cornstarch and 1/4 cup of water together. When the strawberry/sugar mixture comes to a boil slowly add the cornstarch mixture and when it thickens take off of heat and add 1 Tablespoon of butter and 2 teaspoons of lemon juice. Cool.
P.S. One helpful hint: If the glaze is not colorful enough add a drop or two of red food coloring
Toppping
8 oz. Cool Whip
8 oz. Cream Cheese
1 Cup Powder Sugar
Mix together thoroughly.
