Sausage and Potatoes

Here is a ultra easy and mega forgiving recipe that anyone with or with out opposable thumbs can make.  This hearty meal was taught to me by an old man I used to work with, he made it just like this but some times added chicken breast to it as well.

Here Is What You Will Need

Brautwurst- I usually make 2 links per person, but we grow big down here so you may not need that much, you know what they say "everything is bigger in Texas." Well mostly our belts. Any white sausage will do as long as its not overly strong tasting.
onion- chunks
sweet potato-cubed
red skin potatoes- also cubed
yellow fleshed potatoes- cubed again. (the math side of me finds that ironic) I think I used yukon gold potatoes, boy were they lost.
olive oil
chicken fajita seasoning- this is the only thing to be a stickler on for this recipe
chicken base

Cut and Cook, Sounds Like Pirate Names.

Add a little oil to the bottom of your pot and turn the heat to medium high. Then start adding your onions, potatoes and sweet potatoes. stir everything up as you go along, you want to cover everything in a little bit of the oil. After all of the root foods are in tthe pot add your seasoning. I usually just add what I think is enough and the add some more later after everything has cooked based on the taste at that time. Once the seasonings are in as well, add a little bit of water to the pot. Not more then half of the volume of the root foods. Let it cook on medium high for a while.

Brown the Meat

Brown the sausage well on both sides. You really aren't trying to fully cook them on the griddle, just to brown them and give them a little color.

When a Good Thing Comes Together

With some stirring involved, your roots foods will start to make a gravy. Add your sausage and cook everything till the sausage is done all the way through. Right before you serve this wonderful meal you have to add the secret ingredient, brown sugar. Add just enough to soak up some of the liquid in the pot. 

Alternate Ending

To make it in the crock pot add everything to the crock at once, no need to brown the sausage. Don't add the brown sugar, however, until right before you are ready to serve.
