Simple Strawberry-Pineapple Cobbler
Do you need a quick dessert and have a cake mix but no eggs or oil? No problem! With just two more ingredients, no stirring, and little measuring, this quick and easy-to-prepare dessert transforms a plain cake mix into a deliciously moist cobbler. Besides having such a wonderful flavor, this dessert is very versatile. As long as you have 24 oz. of frozen fruit to put in the bottom of the dish, feel free to use your favorite or a combination of what you have on hand. I only had 12 oz. of frozen strawberries, so I also used 12 oz. of frozen diced pineapple. The combination of blackberries and blueberries is also very tasty. In addition, this dessert serves at least twelve, so it is perfect for large families, potlucks or holiday gatherings. My family is small, so I cover and refrigerate the leftovers to have a wonderful dessert on hand for several days.
Ingredients:
Non-stick canola oil cooking spray
1 (15.25 oz.) box white cake mix
1 ½ cups regular or diet lemon-lime flavored soda (may substitute one 12 oz. can)
24 oz. diced frozen fruit, thawed for 10-15 minutes (I used 12 oz. strawberries and 12 oz. pineapple)
Supplies
1 13x9x2-inch baking dish
2 cup measuring cup
Spray Dish
Spray the 13x9x2-inch baking dish with cooking spray.
Add Fruit to Dish
Spread diced strawberries evenly in sprayed baking dish.
Add diced pineapple evenly on top of strawberries.
Add Cake Mix
Sprinkle dry cake mix evenly over pineapple.
Add Soda
Slowly pour soda evenly over cake mix, covering as much of cake mix as possible without stirring. (Lightly spray any dry cake mix areas with cooking spray.)
Bake Cobbler
Bake at 350 degrees for 45-50 minutes or until top is golden brown. Cool for 10 minutes before serving.
Serve Cobbler
To serve, cut into squares and use an egg spatula to invert servings onto plates. Garnish if desired. Serve warm. Serves 12.
Notes:
Notes for dicing fruit:
I thaw my fruit for 10-15 minutes before dicing. I only dice large pieces of fruit such as whole strawberries and large pineapple chunks. I leave blackberries, blueberries, and raspberries whole.
Notes for substitutions:
Orange or strawberry flavored soda
Yellow, lemon or strawberry cake mix
Any combination of frozen diced fruit (I leave blackberries, blueberries, and raspberries whole)
Notes for serving:
A scoop of vanilla ice cream on top of this warm cobbler is quite popular. I also like to serve this with steaming mugs of coffee.
