Snickerdoodle Blondies
I have always been a huge fan of snickerdoodles, so when I came across this recipe I just had to give it a try! The results were dangerously good, and I plan on making them many more times in the future.

Ingredients
Bars
Filling
Glaze
- 2 and 1/3 cups all-purpose flour
- 1 1/4 tsp baking powder
- 1/2 tsp salt
- 3/4 (1.5 sticks) unsalted butter, softened to room temperature
- 1 cup granulated sugar
- 3/4 cup light brown sugar
- 2 large eggs
- 1 egg yolk
- 1 tsp vanilla extract
- 1 cup white chocolate chips
Filling
- 1 Tbsp sugar
- 1 Tbsp light brown sugar
- 1 Tbsp ground cinnamon
Glaze
- 1 cup powdered sugar
- 1 Tbsp half and half (or milk or cream)
- 1/4 tsp vanilla extract
Dry Ingredients
In a bowl combine flour, baking powder, and salt.
Cream Butter and Sugars
In a separate bowl or stand mixer, beat together butter and sugars until creamy.
Add Eggs and Vanilla
Mix in Dry Ingredients
On low speed, add dry ingredients
Stir in White Chocolate Chips
Stir in white chocolate chips by hand.
These make the bars a tad more on the super sweet side in my opinion, so if you don't have much of a sweet tooth I would leave these out.

Cinnamon Filling
Mix together the cinnamon, sugar, and brown sugar to make the filling.
Layers
Spoon half of the batter in a greased baking dish.
Sprinkle filling
Add the rest of the batter on top
Some of the filling might get mixed into the top layer. This can be tricky since the batter gets stuck to the spoon, and mine didn't turn out as pretty as the recipe I was following, but they still turn out just as delicious!

End Results :)
Bake at 350F for 22-26 minutes or until golden brown and a toothpick comes out clean when inserted.
Let cool for 1 hour
When cooled, stir together icing ingredients and drizzle over bars.
Makes about 24 small bars.
