Sourdough Apple and Raisin Cake
When you're hungry for breakfast and don't fell like the usual, or your lunch has intentionally gone missing this is a great option. The high moisture content combined with the sustaining and good-for-your-health sourdough base will also be appreciated by a tired worker and anyone with a moreish appetite at morning tea time.
Ingredients
For this cake you will need:
- 270 grams of flour
- 300 grams of warm water
- 1 teaspoon of cinnamon
- 1 teaspoon of mixed spice
- 1/2 teaspoon of vanilla
- 1 cup of raisins
- 55 grams of sourdough starter Sourdough Starter
- 150 grams of sugar
- 1/2 teaspoon of baking soda
- 100 grams of butter
- 300 grams of diced apple
- 4 teaspoons apple cider vinegar
Place the flour into a bowl and add the cinnamon, mixed spice, raisins, sourdough starter and water.
Mixing
Mix up the ingredients and leave in a bowl for about 5 hours until bubbles appear. The bubbles tell you the sourdough starter has worked through the mixture and is ready to be used.
Sugar and Baking Soda
Scrape the now fermented dough into a fresh bowl. In a separate bowl mix the sugar and baking soda together then add to the main dough. Mix it up until all of the sugar has been incorporated into the dough. It will be stretchy but keep mixing until it has all combined.
Butter and Apple
Melt the butter and pour half of it into the cake batter mix it through. The remaining butter will be used in the next step.
Add the diced apple and stir it in.
Vinegar Reaction
To the remaining butter add 4 teaspoons of apple cider vinegar and stir it around. Next add it to your cake batter and stir it in. At this point we have to work fast because the vinegar and baking soda will create a chemical reaction to help the cake rise.
Into the Tin
Line your tin with baking paper and pour in the mixed dough. Bake for 50 minutes at 180 degrees Celsius (360F). Then remove from the oven and cool on a rack.
Final Steps
Use a sieve to sprinkle icing sugar over the cake. We have used thinly sliced apple to give it a better presentation.
Pro tip: Use a spoon to gently tap the side of your sieve to create an even rain of icing sugar.
