Spanish Style Omelette (with Red Peppers, Onion and Potatoes)
There is nothing simpler to make than an omelette - whip up this lunch or light dinner in just minutes!
What You Need
To make this omelette you will need the following ingredients:
- 1-2 tablespoons olive oil
- 1 medium onion (chopped)
- 1 red pepper (chopped)
- 250g small potatoes
- 6 eggs
- 2 teaspoons fresh chives (chopped)
- Sea salt and pepper
- Cheese for sprinkling
And the following utensils:
- Heavy based frying pan which is also suitable for using in the oven
- Bowl to beat your eggs in
- Knife (for chopping veggies)
- Chopping board
Boil Your Potatoes
First, place the potatoes in a pan with a little salt and boil until they are just softening. Drain the water and then set to one side.
Prep Your Vegetables
Chop your onions, red pepper and chives and cut your potatoes into thick slices.
Get Cooking
Add one to two tablespoons of olive oil to your frying pan, then cook the onions for a few minutes.
Add in the red pepper and continue to cook until the vegetables are softening.
Lastly, throw in the potatoes and cook for a couple of minutes.
Add the Eggs
Beat the eggs in a bowl and then pour over the vegetables. Add salt and pepper to personal preference.
Turn on the grill in the oven to its highest temperature.
The Omelette's Coming Together
Cook the omelette until the edges are firm but the middle is still jiggly.
Transfer the pan to under the grill and leave it there for around ten minutes.
Take out, sprinkle with cheese and place back under the grill, just until the cheese is bubbling.
Enjoy!
