Spice N' It Up Wet Meat Rub With Lemon Zest Grilled Broccoli
Wet Rub Ingredients:
1 tsp Salt
1 tsp Paprika
1 tsp Rosemary
1/2 tsp Cayenne Pepper
1 tsp Onion Powder
1 tsp Garlic Powder
1 tsp Ground Black Pepper
2 tbs Brown Sugar
1 tsp Honey
1/2 cup Yellow Mustard
Other Ingredients:
4 Boneless Skinless Chicken Breasts
8 slices of Peppered Thick Sliced Bacon
Instructions:
Pre-heat your grill to 350 degrees F. Mix all rub ingredients in a medium size bowl and put aside. Clean 4 boneless skinless chicken breasts. Lay the chicken breasts out on a sheet of foil and generously rub the chicken with the meat rub, repeat for both sides of the chicken. Wrap the rubbed chicken breasts with two slices of peppered thick sliced bacon. Put your rubbed, bacon wrapped chicken breasts on the grill, grill both sides for at least 9 minutes on each side. The cook time may vary depending on altitude. (Grill until the chicken is well done and inside temperature 165 degrees F.)
Lemon Zest Grilled Broccoli
Broccoli Marinade Ingredients:
1 tsp Paprika
1 tsp Parsley
1 tsp Tyme
1 tsp Garlic Powder
1 tsp Salt
1 tsp Ground Black Pepper
1 tsp Rosemary
1/2 cup Extra Virgin Olive Oil
Graded Lemon Zest
Other Ingredients:
2 heads of broccoli cut into sticks and cleaned
10 slices of Peppered Thick Sliced Bacon
Instructions:
Mix all the broccoli marinade ingredients into a large freezer zip-lock bag. Add the broccoli to the marinade, close the bag and toss the broccoli in the bag to coat it thoroughly. Put the zip-lock bag in the refrigerator for 2 hours. After 2 hours in the refrigerator put the marinated broccoli onto a foil piece set out on the counter. Make sure the foil is cupped like a bowl to prevent any marinade from leaking out. Close the foil and poke several holes in the foil for ventilation, put your foil on the grill at 350 degrees F. with your chicken. Put 10 slices of peppered think cut bacon on the grill at 350 degrees F. and grill both sides for 5-7 mins. each. Make sure bacon is crispy, remove from the grill and let sit for 5 mins. Crumble the 10 slices of peppered thick cut bacon over the broccoli and garnish the chicken if desired. Continue to check the broccoli stirring it around about every 5 minuets; total cook time 15-20 minuets. Remove the broccoli foil bowl from the grill and pour the broccoli with any juices onto a serving platter, and grate a desired amount of lemon zest on top. The cook time may vary depending on altitude
Serve your meal with 2 1/2 cups Fried Rice-A Roni and one Dinner Yeast Roll for each person. The frozen rolls will work just fine and only take 5 minuets to heat. This meal is simple and all ingredients used are straight from the pantry, refrigerator and freezer.
