428g / 1 & 1/2 Cups Greek Yogurt

1 Large Cucumber

2-3 Garlic Cloves

3tbsp Fresh Dill

6 Mint Leaves

1tbsp White Wine Vinegar

2tbsp Olive Oil

1/2tsp Paprika 1/4 – 1/2tsp Cayenne Pepper

Peel and grate the cucumber into a large bowl. Season the cucumber with salt and leave to sit for 5 minutes. After 5 minutes, place the cucumbers in clean towel or cloth and squeeze out all the excess liquid. Grate the garlic and finely chop the dill and mint.

MIX TOGETHER

Add all the ingredients to a large bowl and mix together. Finish by seasoning with salt and pepper to taste. Cover with cling film and leave to sit in the fridge for 3 hours before serving.
