Star Cakes

These mini jelly-filled treats are amazing, especially if you're getting ready for a road trip! Star Cakes are a snack food originally from We Bare Bears, and according to series creator Daniel Chong, it was inspired by the American snack cakes known as Twinkies. I analyzed a Twinkie-making video* but excluded the filling preparation. Without further ado, let's bring these babies to life!

Supplies

To start making these snacks, we will need:

Ingredients

  • 1/2 cup self-raising flour
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 2 tablespoons milk
  • 4 tablespoons unsalted butter
  • 1/2 teaspoon vanilla extract
  • 5 eggs
  • 3/4 cup caster sugar
  • Concord grape jelly

Tools

  • Plastic spatula
  • Mini star pan
  • Baking syringe
  • Hand mixer

Making the Batter

  1. Start off by preheating the oven to 180°C/350°F.
  2. In a large bowl, place the two flours, sugar and salt.
  3. Add the milk and butter in a jug, then melt it in the microwave for 15-20 seconds.
  4. Add vanilla extract to the milk, then leave it to cool down.
  5. Separate the egg whites from the yolk and add to the stand mixer. Mix until peaks have been formed.
  6. Add the wet milk mixture to the dry flour mixture.
  7. Add in the yolks and mix with a wooden spoon until well combined.
  8. Gently fold in the egg whites until combined.
  9. Pour the mixture into a 12-in-1 mini star cake pan (Note: you may need to purchase them online).
  10. Place the pan in your preheated oven for 13-15 minutes.

Finishing Up

  1. Once the cakes are baked, leave them to cool.
  2. Fill a syringe with grape jelly and inject each cake with it.

Enjoy
