Steamed Fig Pudding

If you read the title (as I did just now) as 'Steamed Pig Fudding' then you need to put your glasses on!

Anyway this is an interesting little pudding. We ate it with a side of natural yogurt, but I reckon it would be great with custard and whipped cream.

Ingredients

To make this fig pudding you will need:

  • 125 grams (4.4 oz) figs
  • 45 grams (1.6 oz) butter
  • 45 grams (1.6 oz) brown sugar
  • 1 egg
  • 1/2 small carrot (lol that is funny - is this the same as 1/4 large carrot?) - Aim for 1/2 cup of grated carrot
  • 1 pinch cardamom powder
  • 3 grams pear syrup or golden syrup
  • 11 grams (0.4 oz) almonds
  • 11 grams (0.4 oz) sourdough starter
  • 45 grams (1.6 oz) white stale bread crumbs
  • 1 pinch salt

Chopping

Chop up the almonds then using scissors snip up the figs into small pieces.

Mixing

In a stand mixer cream the butter and sugar. Add the egg and mix it through. Add the figs, carrot, bread crumbs, sourdough starter, almonds, syrup, cardamom and salt to the egg mixture and mix it through to combine.

Filling the Dish

Line the base of a ramekin with some baking paper. Then make a double-thickness lid out of the baking paper so it fits over the top and a little over the sides. Fill the ramekin with the mixture and then place the baking paper lid on top tying it in place with string.

Steaming

Use a steamer to cook the dish. But if you don't have a steamer...

In a large pot add some small heat proof dish's that the ramekin can sit on. Place the ramekin on the stand you just made and pour in some boiling water making sure it doesn't go more than half way up the side of the ramekin. Place a lid on the pot to keep the steam in.

Finished

Steam the pudding for 1 hour then take it out of the steamer and remove the baking paper lid.

Now it is time to eat and enjoy. Serve with yogurt or whipped cream.
